Cucumber Mango Summer Salad
Cool, refreshing summer salad which is light with hints of sweetness and salt.

Ingredients

1 cup diced english cucumber

1 cup diced mango

¼ cup diced red onion

½ cup diced roma tomatoes

4 cloves garlic, minced

½ cup diced radishes or daikon root

¼ cup diced red bell pepper

¼ cup diced kalamata olives

1/3 cup fresh parsley, finely chopped

1/4 cup chopped walnuts

1 tbsp oregano

¼ cup olive oil

1/4 cup fresh lime juice

2 tbsp white vinegar
Preparation

Wash and dice all, place them in a big bowl and mix it all together. Serve chilled.
