Cucumber Mango Summer Salad

Cool, refreshing summer salad which is light with hints of sweetness and salt.

💚Low Fat 🥬 Vegan🌿Vegetarian

Ingredients

  • 1 cup diced english cucumber

  • 1  cup diced mango

  • ¼ cup diced red onion

  • ½ cup diced roma tomatoes

  • 4 cloves garlic, minced 

  • ½ cup diced radishes or daikon root

  • ¼ cup diced red bell pepper 

  • ¼ cup diced kalamata olives

  • 1/3 cup fresh parsley, finely chopped

  • 1/4 cup chopped walnuts

  • 1 tbsp oregano

  • ¼ cup olive oil

  • 1/4 cup fresh lime juice

  • 2 tbsp white vinegar

  • Salt and Pepper to taste

Preparation

  • Wash and dice all, place them in a big bowl and mix it all together.  Serve chilled.
