Cucumber Avocado Salad 

Cool, green, creamy and crispy salad

💚Low Fat 🥬 Vegan🌿Vegetarian

Ingredients

  • 2 ripe avocados cubed

  • 2 tbsp fresh lemon juice

  • 3 tbsp olive oil

  • 1 English cucumber washed and diced

  • 2 tbsp red onion diced

  • ¼ cup fresh cilantro

  • 1 tsp ground cumin

  • Dash of tabasco sauce

Creamy dressing

Preparation

  • Gently mix together avocado and lemon juice in a medium bowl.

  • Add all remaining ingredients and gently toss to combine.

  • Refrigerate 20 minutes before serving.
